1 clove garlic, minced

3/4 pound beef top round steak, cut in 1 1/2" cubes
1/2 pound extra firm tofu, cut in 1 1/2" cubes
1 small red or green bell pepper, cut in 1" squares
4 green onions, trimmed and cut in half crosswise
Serves: 4 Cooking Time: 30 minutes - one hour Instructions: Mix wine, garlic and pepper; pour over beef and tofu. Marinate 30 minutes. Drain, reserving marinade. Thread beef, tofu, bell pepper and onion on skewers. Grill over hot coals or under the broiler, turning occasionally and basting with reserved marinade, until beef is done and vegetables are tender, 5-8 minutes.

PINEAPPE MUFFINS
Ingredients:
3/4 cup butter
1 cup milk
2 lightly beaten eggs
3/4 cup sugar
3 cups flour
6 tsp baking powder
1/4 tsp salt
1 cup coconut
1 can crushed pineapple (about 13-14 ozs)
Preparation:
Preheat oven to 350oF, prepare pans. Melt butter, blend in milk, eggs & pineapple. Combine sugar, flour, b/pdr, salt & coconut. Add to wet mix until just combined. At this stage if mixture is too dry add another 1/4 cup of milk. Spoon into pans & sprinkle tops with sugar, bake for about 20 mins or until golden brown. This recipe came from a lady that makes muffins for a living, consequently they will rise up rather large! You might like to try them with less baking powder. Pour the nut cake mix in the greased cake pan and bake it in preheated oven to 180°C for about 20 minutes, or until toothpick inserted in the center comes out clean.

Beat egg yolks with sugar and mix flour, orange juice and shredded orange peel in it.

Instructions: In a large soup pot, saute onion, garlic and celery in oil over medium heat until the vegetables are soft, about 5 minutes. Add seasonings and saute 1 minute more. Add water or stock, bay leaf and peppercorns, cover, bring to a boil. (If you’re using uncooked rice, add it at this point, lower heat to a gentle boil and cook for 30 minutes, then follow remaining directions). Add cabbage and squash and simmer 15 minutes. Add cooked rice, chicken, salt, pepper and celery leaves and simmer 5 minutes more.

Remove from heat immediately and pour over the ham. Return ham to oven and bake approximately 45 minutes or until interior temperature is 170 degrees. To serve: Garnish with sautéed pineapple slices and fresh mint.

Nutmeg (opt)
1/4 lb Cream cheese; softened & cut into cubes
1 c Swiss cheese; grated

Instructions:
1. Wash spinach; trim, cook, and chop.
2. Melt the butter in a large saucepan. In it slowly sauté the mushrooms and scallion until tender. Then add flour and stir just couple of minutes.
3. Whisk in first chicken broth and then milk, stirring until thickened. Add salt if desired, pepper, nutmeg if desired, cream cheese and Swiss cheese; stir until melted. Then stir in spinach. Heat and stir very gently.
4. Season to taste.
