Low Carbohydrate asian noodle dish with pork

This low carb noodle dish can made with shirataki noodles or tofu noodles. Chicken can be used in place of the pork.

Ingredients:
• 2 12 oz packages shirataki or tofu noodles
• 1 lb ground pork
• 1/2 cup soy sauce
• 1/4 cup dry sherry
• 1/3 cup peanut butter
• 1 tablespoon rice vinegar or cider vinegar (rice vinegar can be sugary)
• 1/2 teaspoon Asian chili sauce or other hot sauce
• 8 cloves garlic - minced, pressed, or grated
• 2 Tablespoons grated fresh ginger
• 2 Tablespoons sesame oil
• l lb bean sprouts
• 6 green onions or scallions, chopped
• Pepper
• 1-2 Tablespoons mild oil, such as peanut or high oleic safflower oil

Preparation:
1) Mix ground pork, 2 Tablespoons of the soy sauce, and the sherry together, and set aside.

2) Mix the rest of the soy sauce with the peanut butter, vinegar, and hot sauce together, although with 1/4 cup water.

3) Heat skillet or wok until hot. Add peanut or other mild oil to the pan and cook pork, breaking it up into small bits as it cooks.

4) Meanwhile, rinse noodles in hot water in a colander, and cut them up into shorter pieces with kitchen or regular scissors. (I just stick my scissors in and cut a few times.)

5) When meat is brown, add the ginger and garlic, and cook another minute or so, until fragrant.

6) Add sauce mixture, and the noodles. Toss together and heat through.

7) Add bean sprouts and toss again. Sprinkle top with mix of natural herbs.

Recipes and health tips for Taurus

Taurus's taste buds are keen, and they thoroughly enjoy good food. They may have a tendency to put on weight, as they get older. To keep the thyroid functioning at its best, Taureans should eat food with natural iodine, such as fish and seafood. Other foods that will help keep you healthy are eggs, liver, kidney beans, wheat germ, fresh fruit and green salads.

Our recipes for Taurus:

CHICKEN IN LEMON GRASS AND CHILI

4 Servings

3 pounds whole chickens

1 large onion

1 salt

1 teaspoon ground chiles

1 tablespoon granulated sugar

1 cup water

4 cloves garlic

3 tablespoons vegetable oil

2 tablespoons lemon grass, minched

4 tablespoons fish sauce, (nuoc mam)

1 tablespoon caramel sauce

Rinse chicken and dry well. Cut into small pieces. Peel garlic and slice finely. Cut onion into halves lengthwise and then cut lengthwise into 1/2 inch strips. Heat oil in large frying pan over medium heat. Add a pinch of salt, garlic and onion. Fry over medium heat until onion becomes translucent. Add lemon grass and chili. Fry 1 to 2 minutes until fragrant. Add chicken and cook until lightly browned. Add fish sauce, sugar and caramel sauce. Mix well. Add 1 cup water and cook 45 minutes or until chicken is tender. Stir occasionally and add more water if necessary. Makes 4 servings.

CARAMEL SAUCE: Mix 1/2 cup of sugar with 4 tablespoons of water in heavy saucepan. Bring to a boil over medium heat and let boil until mixture changes colour. Turn heat down to low and heat until brown. Add 1/2 cup water to mixture. Stir until sugar is dissolved. Remove from heat and store in a jar in the refrigerator.

EGGPLANT SALAD

4 Servings

1 pound eggplants

1 green bell pepper, chopped

1 garlic clove, crushed

1/2 cup olive oil

1/3 cup red wine vinegar

1 teaspoon dried oregano, crushed

1 teaspoon salt

1 canned water packed tuna, chunk-style (12 1/2-oz) drained

1 tomato, seeded and chopped

salad greens, Crisp

1/4 cup feta cheese, crumbled

Cut eggplant in 1-inch cubes. Steam over 1/2 cup boiling water for 2 to 5 minutes until eggplant is tender. Drain. Arrange with green pepper in 2-quart shallow casserole.
Combine garlic, oil, vinegar, oregano and salt in covered jar. Shake well. Pour over eggplant mixture. Cover and refrigerate 1 hour.
Drain marinade and reserve for other use.
Toss marinated vegetables with tuna and tomato. Spoon into salad bowl lined with crisp greens. Top with cheese and serve.

CONFEDERATE PIE

Servings: 6

Ingredients:

1/4 lb. butter, melted
6 eggs
2 cups sugar
1/3 cup cornstarch
1/2 cup half-and-half
Juice of
6 lemons
1 (9-in.) unbaked pie shell

Instructions:

Mix melted butter with eggs and sugar in electric mixer on medium speed 2-3 minutes, or until well mixed. Stir cornstarch into half-and-half to dissolve, then pour into egg mixture. Add lemon juice and stir until well mixed. Pour into pie shell. Bake 1-1/2 hours at 300 degrees until brown on top and done in centre. To tell if pie is done, shake pan gently. Filling should shiver in the middle and not be runny.
